Two new culinary concepts have opened at Eataly Las Vegas at Park MGM: Eataly Bar and Pizza al Padellino.
The additions, which complete the first major renovation since Eataly Las Vegas opened six years ago, are in a space previously occupied by the Wine Shop.
The sleek Eataly Bar includes a horseshoe-shaped design with both indoor and outdoor seating, "blending sophistication with the laid-back allure of the Amalfi Coast," according to a statement from Eataly.
Guests can pair Italian spritzes, craft cocktails and Italian wines with treats from the bruschetta menu. The Caponata ($18), a take on a classic Italian antipasto, has creamy stracciatella cheese, caponata, basil and a drizzle of olive oil. Eataly Bar also features drinks to go.
The adjacent Pizza al Padellino showcases styles from Turin, Italy, where Eataly was founded. One of the highlights is the Funghi a Tartufi pizza ($32), which has mozzarella, aged 14-month Parmigiano Reggiano and roasted mixed mushrooms, finished with black truffles and thyme.
Eataly Bar is open from 11 a.m. to 11:30 p.m. Sundays to Thursdays and 11 a.m. to 12:30 a.m. Fridays and Saturdays. Pizza al Padellino's hours are from 11 a.m. to 10 p.m. Sundays to Thursdays and from 11 a.m. to 11 p.m. Fridays and Saturdays.
What else is new?
Other changes completed last year include an expansion of its Cucina del Mercato dining area, adding 116 seats for its expanding list of options.
Several food stations were also introduced: Le Polpette, which serves traditional meatballs and burgers; La Pasta Fresca; and La Carne e Il Pesce, which features sustainably sourced meats and seafood.
